Coconut Stuffed Dates

Chewy, crunchy, caramelly, and chocolatey.  The perfect two bite sweet treat that tastes like a candy bar but is actually made from nourishing ingredients. Rich in healthy fats, antioxidant, fiber, and refined-sugar free. 

What Makes These Healthy?

These are made from simple ingredients—coconut, dates, cacao, and maple syrup. There are no fillers or added-sugars, yet they still taste too good. Dates are a good source of fiber, potassium, magnesium, and antioxidants. Coconut (from the oil, shreds, and cream) is rich in healthy fats, electrolytes, fiber, and anti-inflammatory properties. Cacao is full of antioxidants, iron, magnetism, and calcium. Maple syrup is a natural sugar and contain nutrients, such as potassium, calcium, and zinc. 

Don’t Want to Make a Homemade Cacao Drizzle?

You can easily melt  chocolate chips (or a chocolate bar),  instead of using cacao powder and maple syrup. Still add some coconut oil to the melted chocolate to make it slightly thinner. Use the same method of melting over a double boil.

Ingredients
  

  • 1/2 cup raw cacao powder
  • 1/2 cup maple syrup, or honey
  • 1/2 cup coconut oil
  • 1/3 cup coconut cream, or coconut milk
  • 1/3 cup unsweetened coconut shreds
  • 12 medjool dates
  • 12 almonds, optional

Method
 

Make Cacao Drizzle
  1. Prepare a double boil: Add water to a pot (just a few inches of water) and simmer over meidum-low heat. Place a heatproof bowl on top of the pot, and make sure the bowl touching the boiling water. (The steam of the water will rise and heat the bowl, therefore melting the ingredients). 
  2. Add the raw cacao powder, maple syrup, and coconut oil to your heatproof bowl. Stir the ingredients occasionally, until the oil has completely melted and everything is combined. 
  3. Carefully remove the bowl from the pot. Set aside. (The drizzle will cool slightly as the stuffed dates are prepared. Optionally, you can transfer the drizzle from the hot bowl to a different bowl). 
Make the Stuffed Dates
  1. In a medium bowl, add the coconut shreds and coconut cream. Mix until combined. 
  2. Cut each date length wise down the middle. With clean hands, remove the pit from each date. Fill up each date with the coconut mixture. Optional: Also add one almond inside each date (this will mimic an almond joy candy bar). 
  3. Dip the dates in the chocolate drizzle, coating them fully. Place the dates on a baking sheet, lined with parchment paper.
  4. Freeze them for 5-10 minutes (or until the chocolate shell has firmed up). Remove from freezer and enjoy!

Notes

  1. How to Store: Keep them in a airtight container in the fridge or freezer so the chocolate shell remains hard. They will last for weeks in the fridge. I like to freeze them so they last longer (like months) and they only take a few minutes to defrost.
  2. Maple Syrup: You can substitute with honey, agave syrup, date syrup, or any liquid sweetener you have!
  3. Raw Cacao Powder: You can substitute with regular cocoa powder.
